Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup key lime juice (freshly squeezed if possible)
  • 1 tablespoon lime zest
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Lime slices, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  3. Press the mixture into the bottom and up the sides of a 9-inch pie dish to form a crust.
  4. In a separate bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth.
  5. Pour the filling into the prepared crust.
  6. Bake in the preheated oven for 15 minutes. Remove from oven and allow to cool to room temperature.
  7. Refrigerate for at least 3 hours or until set.
  8. In a mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  9. Spread the whipped cream over the chilled pie and garnish with lime slices.
  10. Slice and serve chilled.
