Description
This icebox cake is a classic dessert that’s easy to make and requires no baking. Layered with creamy filling and cookies, it’s the perfect treat for warm weather.
Ingredients

- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package (14 oz) chocolate wafer cookies or graham crackers
- 1 cup fresh berries (strawberries, blueberries, or raspberries) for layering
- Chocolate shavings or cocoa powder for garnish (optional)
Instructions
- In a large mixing bowl, whip the heavy cream until soft peaks form.
- Add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
- Spread a thin layer of whipped cream on the bottom of a 9×13 inch baking dish.
- Layer half of the cookies on top of the whipped cream, then spread half of the remaining whipped cream over the cookies.
- Add half of the fresh berries on top of the whipped cream.
- Repeat the layers with the remaining cookies, whipped cream, and berries.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, garnish with chocolate shavings or cocoa powder if desired.
Notes
- You can use different types of cookies or add different fruits based on your preferences.
- This cake is best enjoyed within a few days of making it.
