This icebox cake is a classic dessert that’s easy to make and requires no baking. Layered with creamy filling and cookies, it’s the perfect treat for warm weather.


Ingredients

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package (14 oz) chocolate wafer cookies or graham crackers
  • 1 cup fresh berries (strawberries, blueberries, or raspberries) for layering
  • Chocolate shavings or cocoa powder for garnish (optional)

Instructions

  1. In a large mixing bowl, whip the heavy cream until soft peaks form.
  2. Add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
  3. Spread a thin layer of whipped cream on the bottom of a 9×13 inch baking dish.
  4. Layer half of the cookies on top of the whipped cream, then spread half of the remaining whipped cream over the cookies.
  5. Add half of the fresh berries on top of the whipped cream.
  6. Repeat the layers with the remaining cookies, whipped cream, and berries.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  8. Before serving, garnish with chocolate shavings or cocoa powder if desired.

Notes

  • You can use different types of cookies or add different fruits based on your preferences.
  • This cake is best enjoyed within a few days of making it.
