Ingredients

  • 1 cup 1 cup unsalted butter, softened
  • 1 cup 1 cup granulated sugar
  • 1 cup 1 cup brown sugar, packed
  • 2 2 large eggs
  • 2 teaspoons 2 teaspoons vanilla extract
  • 3 cups 3 cups all-purpose flour
  • 1 teaspoon 1 teaspoon baking soda
  • 1/2 teaspoon 1/2 teaspoon salt
  • 2 cups 2 cups chocolate chips
  • 2 pints 2 pints ice cream (flavor of choice)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  9. Once the cookies are completely cooled, take one cookie and add a scoop of ice cream on the flat side. Top with another cookie, pressing down gently to create a sandwich.
  10. Repeat with the remaining cookies and ice cream.
  11. Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.
