These homemade ice cream sandwiches are the perfect treat for any occasion! With soft cookies and creamy ice cream, they are sure to be a hit.

- 1 cup 1 cup unsalted butter, softened
- 1 cup 1 cup granulated sugar
- 1 cup 1 cup brown sugar, packed
- 2 2 large eggs
- 2 teaspoons 2 teaspoons vanilla extract
- 3 cups 3 cups all-purpose flour
- 1 teaspoon 1 teaspoon baking soda
- 1/2 teaspoon 1/2 teaspoon salt
- 2 cups 2 cups chocolate chips
- 2 pints 2 pints ice cream (flavor of choice)
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Once the cookies are completely cooled, take one cookie and add a scoop of ice cream on the flat side. Top with another cookie, pressing down gently to create a sandwich.
- Repeat with the remaining cookies and ice cream.
- Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.
