Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives (optional)
  • 1/4 cup lemon juice
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, oregano, salt, and pepper. Brush the chicken breasts with the mixture.
  3. Grill the chicken for 6-7 minutes on each side, or until cooked through. Remove from grill and let rest for 5 minutes before slicing.
  4. In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  5. In a separate small bowl, whisk together lemon juice, Dijon mustard, honey, olive oil, salt, and pepper to make the dressing.
  6. Slice the grilled chicken and place it on top of the salad. Drizzle with dressing and toss gently to combine.
  7. Serve immediately.
