- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives (optional)
- 1/4 cup lemon juice
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix olive oil, garlic powder, oregano, salt, and pepper. Brush the chicken breasts with the mixture.
- Grill the chicken for 6-7 minutes on each side, or until cooked through. Remove from grill and let rest for 5 minutes before slicing.
- In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- In a separate small bowl, whisk together lemon juice, Dijon mustard, honey, olive oil, salt, and pepper to make the dressing.
- Slice the grilled chicken and place it on top of the salad. Drizzle with dressing and toss gently to combine.
- Serve immediately.
