This healthy strawberry rhubarb crisp is a delightful dessert that balances the sweetness of strawberries with the tartness of rhubarb, topped with a crunchy oat topping. Easy to make and perfect for spring or summer!


Ingredients

  • 2 cups Fresh strawberries, hulled and sliced
  • 2 cups Fresh rhubarb, chopped
  • 1/4 cup Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 1 cup Oats
  • 1/2 cup Almond flour or whole wheat flour
  • 1/4 cup Coconut oil, melted
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1/4 cup Chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced strawberries, chopped rhubarb, honey (or maple syrup), and vanilla extract. Mix well and transfer to a greased 8×8 inch baking dish.
  3. In another bowl, combine the oats, almond flour, melted coconut oil, cinnamon, salt, and chopped nuts (if using). Stir until the mixture is well combined.
  4. Spread the oat mixture evenly over the strawberry-rhubarb filling in the baking dish.
  5. Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and the fruit is bubbling.
  6. Allow to cool for a few minutes before serving. Enjoy warm or cold!

Notes

  • For a gluten-free version, use certified gluten-free oats and almond flour.
  • You can adjust the sweetness to your preference by adding more or less honey/maple syrup.
  • Serve with yogurt or ice cream for an extra treat!
