Description
This healthy strawberry rhubarb crisp is a delightful dessert that balances the sweetness of strawberries with the tartness of rhubarb, topped with a crunchy oat topping. Easy to make and perfect for spring or summer!

- 2 cups Fresh strawberries, hulled and sliced
- 2 cups Fresh rhubarb, chopped
- 1/4 cup Honey or maple syrup
- 1 teaspoon Vanilla extract
- 1 cup Oats
- 1/2 cup Almond flour or whole wheat flour
- 1/4 cup Coconut oil, melted
- 1 teaspoon Cinnamon
- 1/4 teaspoon Salt
- 1/4 cup Chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the sliced strawberries, chopped rhubarb, honey (or maple syrup), and vanilla extract. Mix well and transfer to a greased 8×8 inch baking dish.
- In another bowl, combine the oats, almond flour, melted coconut oil, cinnamon, salt, and chopped nuts (if using). Stir until the mixture is well combined.
- Spread the oat mixture evenly over the strawberry-rhubarb filling in the baking dish.
- Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and the fruit is bubbling.
- Allow to cool for a few minutes before serving. Enjoy warm or cold!
Notes
- For a gluten-free version, use certified gluten-free oats and almond flour.
- You can adjust the sweetness to your preference by adding more or less honey/maple syrup.
- Serve with yogurt or ice cream for an extra treat!
