Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the chopped rhubarb, honey (or maple syrup), vanilla extract, and cinnamon. Mix well and spread evenly in a baking dish.
- In another bowl, mix the rolled oats, almond flour, melted coconut oil, chopped nuts, and a pinch of salt until crumbly.
- Sprinkle the oat mixture over the rhubarb layer in the baking dish.
- Bake for about 30-35 minutes, or until the topping is golden brown and the rhubarb is bubbly.
