- 1 lb (450g) lean chicken breast, diced
- 4 cups (960ml) low-sodium chicken broth
- 2 cups (300g) diced carrots
- 1 cup (150g) chopped celery
- 1 cup (150g) diced onion
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups (300g) chopped kale or spinach
- 1 can (15 oz) diced tomatoes, undrained
Instructions
- In the crockpot, combine the diced chicken, chicken broth, carrots, celery, onion, garlic, thyme, oregano, salt, and pepper.
- Stir well to combine all the ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the chopped kale or spinach and the diced tomatoes.
- Taste and adjust seasoning if necessary.
- Serve warm and enjoy!
