- 1 pound ground beef
- 1 cup cooked rice (white or brown)
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup corn (canned or frozen)
- 1 cup black beans, drained and rinsed
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 avocado, sliced
- 1/2 cup shredded cheese (cheddar or your choice)
- Fresh cilantro, for garnish
- Sour cream, for serving (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, and sauté until softened.
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through.
- Stir in the bell pepper, corn, black beans, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes, until heated through.
- To assemble the bowls, start with a base of cooked rice. Top with the ground beef mixture.
- Add sliced avocado and shredded cheese on top. Garnish with fresh cilantro and serve with sour cream if desired.
