Ingredients

  • 1 pound ground beef
  • 1 cup cooked rice (white or brown)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup corn (canned or frozen)
  • 1 cup black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Fresh cilantro, for garnish
  • Sour cream, for serving (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, and sauté until softened.
  2. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through.
  3. Stir in the bell pepper, corn, black beans, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes, until heated through.
  4. To assemble the bowls, start with a base of cooked rice. Top with the ground beef mixture.
  5. Add sliced avocado and shredded cheese on top. Garnish with fresh cilantro and serve with sour cream if desired.
