- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
- Add the shrimp to the marinade, tossing to coat. Cover and refrigerate for 30 minutes.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp.
- Grill the skewers for 2-3 minutes on each side, or until the shrimp are pink and opaque.
- Remove from the grill and serve immediately with lemon wedges.
