- 1 ripe pineapple
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon melted butter
- Juice of 1 lime
- Optional: fresh mint for garnish
Instructions
- Preheat the grill to medium-high heat.
- Cut the top and bottom off the pineapple, then stand it upright and slice off the skin. Remove any eyes with a small knife.
- Cut the pineapple into rings or wedges, about 1/2 inch thick.
- In a bowl, mix the brown sugar and cinnamon together. Brush the melted butter over the pineapple slices, then sprinkle the sugar mixture evenly on both sides.
- Place the pineapple on the grill and cook for about 3-4 minutes on each side, or until grill marks appear and the pineapple is caramelized.
- Remove from the grill and drizzle with lime juice. Garnish with fresh mint if desired.
- Serve warm and enjoy!
