Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 ounces burrata cheese
  • 2 cups arugula or mixed greens
  • 1/4 cup toasted walnuts, chopped
  • 1/4 cup fresh basil leaves
  • Honey for drizzling
  • Balsamic glaze (optional)

Instructions

  1. Preheat grill to medium heat.
  2. Brush peach halves with olive oil and season with salt and pepper.
  3. Place peaches cut side down on the grill and cook for 3-4 minutes until grill marks appear.
  4. Turn peaches over and cook for an additional 2-3 minutes until they are tender.
  5. Remove peaches from the grill and let cool slightly.
  6. On a serving platter, arrange the arugula or mixed greens.
  7. Place the grilled peaches on top of the greens.
  8. Tear the burrata cheese into pieces and scatter over the peaches.
  9. Sprinkle with toasted walnuts and fresh basil leaves.
  10. Drizzle with honey and balsamic glaze if using.
  11. Serve immediately.

Notes

  • Use ripe but firm peaches for the best grilling results.
  • Feel free to add other toppings like feta cheese or prosciutto for extra flavor.
