- 8 oz (225g) halloumi cheese, sliced
- 1 large cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Brush the halloumi slices with olive oil and place them on the grill.
- Grill the halloumi for about 2-3 minutes on each side, until golden brown and grill marks appear.
- In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, and mint leaves.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve the salad topped with the grilled halloumi.
Notes
- You can add other vegetables like bell peppers or arugula for extra flavor.
- For a spicy kick, add a pinch of red pepper flakes to the dressing.
