Ingredients

  • 8 oz (225g) halloumi cheese, sliced
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Brush the halloumi slices with olive oil and place them on the grill.
  3. Grill the halloumi for about 2-3 minutes on each side, until golden brown and grill marks appear.
  4. In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, and mint leaves.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Serve the salad topped with the grilled halloumi.

Notes
