- 2 ½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter
- 1 ½ cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup milk
- ¾ cup rainbow sprinkles
- 8 oz cream cheese
- 4 cups powdered sugar
- 1 cup heavy cream
- as desired additional sprinkles for decoration
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
- Fold in the rainbow sprinkles until evenly distributed throughout the batter.
- Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For the frosting, beat the cream cheese until smooth. Gradually add the powdered sugar, mixing until combined. Slowly add the heavy cream and beat until fluffy.
- Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then add the second layer of cake. Repeat with the third layer.
- Frost the top and sides of the cake with the remaining cream cheese frosting. Decorate with additional sprinkles as desired.
