Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup milk
  • ¾ cup rainbow sprinkles
  • 8 oz cream cheese
  • 4 cups powdered sugar
  • 1 cup heavy cream
  • as desired additional sprinkles for decoration

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
  6. Fold in the rainbow sprinkles until evenly distributed throughout the batter.
  7. Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. For the frosting, beat the cream cheese until smooth. Gradually add the powdered sugar, mixing until combined. Slowly add the heavy cream and beat until fluffy.
  10. Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then add the second layer of cake. Repeat with the third layer.
  11. Frost the top and sides of the cake with the remaining cream cheese frosting. Decorate with additional sprinkles as desired.
  12. Slice and serve your delicious Funfetti Cake!
