A refreshing and healthy treat, this Frozen Honey Yogurt Bark is topped with a colorful array of mixed berries. Perfect for a quick snack or a dessert!

- 2 cups Greek yogurt (plain or vanilla)
- 1/4 cup honey
- 1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)
- 1/4 cup granola (optional)
- 1 teaspoon vanilla extract (optional)
Instructions
- In a mixing bowl, combine Greek yogurt, honey, and vanilla extract (if using). Mix until well combined.
- Line a baking sheet with parchment paper.
- Spread the yogurt mixture evenly onto the prepared baking sheet, about 1/4 inch thick.
- Sprinkle mixed berries and granola over the yogurt layer, pressing them in slightly.
- Place the baking sheet in the freezer and freeze for at least 4 hours or until solid.
- Once frozen, remove from the freezer and break the bark into pieces.
- Serve immediately or store in an airtight container in the freezer for up to 2 weeks.
Notes
- Feel free to substitute honey with maple syrup for a vegan version.
- You can use any combination of berries or even other fruits like sliced bananas or peaches.
