Ingredients

  • 2 cups Greek yogurt (plain or vanilla)
  • 1/4 cup honey
  • 1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1/4 cup granola (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. In a mixing bowl, combine Greek yogurt, honey, and vanilla extract (if using). Mix until well combined.
  2. Line a baking sheet with parchment paper.
  3. Spread the yogurt mixture evenly onto the prepared baking sheet, about 1/4 inch thick.
  4. Sprinkle mixed berries and granola over the yogurt layer, pressing them in slightly.
  5. Place the baking sheet in the freezer and freeze for at least 4 hours or until solid.
  6. Once frozen, remove from the freezer and break the bark into pieces.
  7. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes
