- 6 to 8 fresh peaches, pitted and sliced
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon butter, cut into small pieces
- 1 refrigerated pie crust (store-bought or homemade)
- 1 egg (for egg wash, optional)
- 1 tablespoon sugar (for topping, optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine sliced peaches, sugar, flour, cinnamon, lemon juice, and vanilla extract. Toss to coat the peaches evenly.
- Roll out the pie crust and fit it into a 9-inch pie dish. Pour the peach filling into the crust and dot with butter.
- Cover with a second pie crust, crimping the edges to seal. Cut slits in the top crust to allow steam to escape.
- If desired, beat the egg and brush it over the crust, then sprinkle with sugar.
- Bake in the preheated oven for 40 to 45 minutes, or until the crust is golden brown and the filling is bubbly.
- Allow to cool before slicing. Serve fresh or with a scoop of vanilla ice cream.
Notes
- For best flavor, use ripe, in-season peaches.
- You can substitute some of the sugar with brown sugar for a richer flavor.
- If using frozen peaches, thaw and drain excess liquid before using.
