Ingredients

  • 6 to 8 fresh peaches, pitted and sliced
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter, cut into small pieces
  • 1 refrigerated pie crust (store-bought or homemade)
  • 1 egg (for egg wash, optional)
  • 1 tablespoon sugar (for topping, optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine sliced peaches, sugar, flour, cinnamon, lemon juice, and vanilla extract. Toss to coat the peaches evenly.
  3. Roll out the pie crust and fit it into a 9-inch pie dish. Pour the peach filling into the crust and dot with butter.
  4. Cover with a second pie crust, crimping the edges to seal. Cut slits in the top crust to allow steam to escape.
  5. If desired, beat the egg and brush it over the crust, then sprinkle with sugar.
  6. Bake in the preheated oven for 40 to 45 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Allow to cool before slicing. Serve fresh or with a scoop of vanilla ice cream.

Notes

  • For best flavor, use ripe, in-season peaches.
  • You can substitute some of the sugar with brown sugar for a richer flavor.
  • If using frozen peaches, thaw and drain excess liquid before using.
