- 1/4 cup powdered sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1 large egg yolk
- 2 tablespoons ice water
- 1 pound fresh apricots, pitted and sliced
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, whisk together flour, powdered sugar, and salt.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Stir in the egg yolk and ice water until the dough comes together.
- Press the dough into a tart pan and prick the bottom with a fork.
- Bake the crust for 15 minutes or until lightly golden. Remove from the oven and let cool.
- In a large bowl, combine sliced apricots, granulated sugar, cornstarch, vanilla extract, and lemon juice. Toss gently to coat.
- Pour the apricot mixture into the cooled tart crust, spreading it evenly.
- Brush the edges of the crust with the beaten egg.
- Bake for an additional 25-30 minutes or until the apricots are bubbly and the crust is golden.
- Allow the tart to cool before slicing and serving.
Notes
- Serve with whipped cream or vanilla ice cream for an extra treat.
- Use ripe but firm apricots for the best texture.
