  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, whisk together flour, powdered sugar, and salt.
  3. Cut in the chilled butter until the mixture resembles coarse crumbs.
  4. Stir in the egg yolk and ice water until the dough comes together.
  5. Press the dough into a tart pan and prick the bottom with a fork.
  6. Bake the crust for 15 minutes or until lightly golden. Remove from the oven and let cool.
  7. In a large bowl, combine sliced apricots, granulated sugar, cornstarch, vanilla extract, and lemon juice. Toss gently to coat.
  8. Pour the apricot mixture into the cooled tart crust, spreading it evenly.
  9. Brush the edges of the crust with the beaten egg.
  10. Bake for an additional 25-30 minutes or until the apricots are bubbly and the crust is golden.
  11. Allow the tart to cool before slicing and serving.
