Ingredients

  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1/2 cup elderflower cordial
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1/2 cup cream cheese, softened
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the elderflower cordial and vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
  7. Divide the batter evenly between the prepared cake pans and smooth the tops.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  10. In a mixing bowl, beat together the cream cheese and powdered sugar until smooth.
  11. In another bowl, whip the heavy cream until soft peaks form, then gently fold into the cream cheese mixture.
  12. Once the cakes are completely cool, spread a layer of frosting on top of one cake layer, place the second layer on top, and frost the top and sides of the cake.
  13. Decorate with edible flowers or additional elderflower cordial, if desired.
  14. Slice and serve chilled.

Notes

  • For a more intense elderflower flavor, you can add more elderflower cordial to the frosting.
  • This cake can be made a day in advance; just store it in the refrigerator until ready to serve.
  • Feel free to add fresh fruit between the layers for added flavor and decoration.
