This refreshing elderflower cake is light, fragrant, and perfect for spring and summer gatherings. It combines the floral notes of elderflower with a moist sponge cake, topped with creamy frosting for a delightful treat.

- 1 1/2 cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1/2 cup elderflower cordial
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- 1/2 cup cream cheese, softened
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the elderflower cordial and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- In a mixing bowl, beat together the cream cheese and powdered sugar until smooth.
- In another bowl, whip the heavy cream until soft peaks form, then gently fold into the cream cheese mixture.
- Once the cakes are completely cool, spread a layer of frosting on top of one cake layer, place the second layer on top, and frost the top and sides of the cake.
- Decorate with edible flowers or additional elderflower cordial, if desired.
- Slice and serve chilled.
Notes
- For a more intense elderflower flavor, you can add more elderflower cordial to the frosting.
- This cake can be made a day in advance; just store it in the refrigerator until ready to serve.
- Feel free to add fresh fruit between the layers for added flavor and decoration.
