Description
Elote, or Mexican street corn, is a delicious corn on the cob coated with creamy toppings, cheese, and spices, making it a popular street food in Mexico.

- 4 ears of corn, husked
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 cup crumbled cotija cheese
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1 lime, cut into wedges
- Salt, to taste
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat a grill to medium-high heat.
- Grill the corn for 10-15 minutes, turning occasionally, until nicely charred.
- In a bowl, mix together the mayonnaise and sour cream until well combined.
- Once grilled, remove the corn from the grill and brush each ear with the mayonnaise mixture.
- Sprinkle crumbled cotija cheese generously over the corn.
- Dust with chili powder and garlic powder to taste.
- Serve with lime wedges and garnish with fresh cilantro, if desired.
Notes
- For a spicier version, add more chili powder or a dash of hot sauce.
- If cotija cheese is unavailable, feta cheese can be used as a substitute.
- Feel free to experiment with toppings, such as avocado or hot sauce.
