Elote, or Mexican street corn, is a delicious corn on the cob coated with creamy toppings, cheese, and spices, making it a popular street food in Mexico.


Ingredients

  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 lime, cut into wedges
  • Salt, to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Preheat a grill to medium-high heat.
  2. Grill the corn for 10-15 minutes, turning occasionally, until nicely charred.
  3. In a bowl, mix together the mayonnaise and sour cream until well combined.
  4. Once grilled, remove the corn from the grill and brush each ear with the mayonnaise mixture.
  5. Sprinkle crumbled cotija cheese generously over the corn.
  6. Dust with chili powder and garlic powder to taste.
  7. Serve with lime wedges and garnish with fresh cilantro, if desired.

Notes

  • For a spicier version, add more chili powder or a dash of hot sauce.
  • If cotija cheese is unavailable, feta cheese can be used as a substitute.
