A refreshing and colorful pasta salad that’s perfect for summer gatherings and can easily feed a crowd.
Ingredients

- 1 pound rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup black olives, sliced
- 1 cup feta cheese, crumbled
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and feta cheese.
- In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with fresh basil before serving.
