Instructions
- Place the chicken thighs at the bottom of the crockpot.
- Add the barbecue sauce, corn, bell pepper, onion, garlic powder, paprika, salt, and pepper.
- Stir everything to combine, making sure the chicken is well coated.
- Cover and cook on low for 6-8 hours or high for 4-6 hours until the chicken is tender.
- Shred the chicken with two forks and stir to combine with the sauce and veggies.
- Serve hot, garnished with fresh parsley.
