Instructions

  1. Place the chicken thighs at the bottom of the crockpot.
  2. Add the barbecue sauce, corn, bell pepper, onion, garlic powder, paprika, salt, and pepper.
  3. Stir everything to combine, making sure the chicken is well coated.
  4. Cover and cook on low for 6-8 hours or high for 4-6 hours until the chicken is tender.
  5. Shred the chicken with two forks and stir to combine with the sauce and veggies.
  6. Serve hot, garnished with fresh parsley.
