A simple and delicious vegetarian Indian dinner recipe that can be prepared quickly, perfect for busy weeknights. This recipe is packed with flavors and nutrients.

- 2 cups of basmati rice
- 1 tablespoon of vegetable oil
- 1 teaspoon of cumin seeds
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 1 green chili, slit
- 1 cup of mixed vegetables (carrots, peas, bell peppers)
- 1 teaspoon of turmeric powder
- 1 teaspoon of garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes and then drain.
- In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle.
- Add the chopped onion and sauté until golden brown.
- Stir in the minced garlic, grated ginger, and green chili. Cook for 1-2 minutes until fragrant.
- Add the mixed vegetables and sauté for another 5 minutes.
- Stir in the drained rice, turmeric powder, garam masala, and salt. Cook for 2 minutes.
- Add 4 cups of water, bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
- Fluff the rice with a fork and garnish with fresh coriander leaves before serving.
Notes
- Feel free to use any vegetables you have on hand.
- For added protein, you can include chickpeas or paneer.
- Serve with yogurt or a side salad for a complete meal.
