- 1 cup dried apricots, chopped
- 1/2 cup almonds, chopped
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter
- 1/4 teaspoon cinnamon
- 1/4 cup shredded coconut (optional)
- 1/4 cup mini chocolate chips (optional)
Instructions
- In a large mixing bowl, combine the chopped dried apricots, almonds, rolled oats, honey, almond butter, and cinnamon.
- Mix well until all ingredients are thoroughly combined.
- If using, fold in the shredded coconut and mini chocolate chips until evenly distributed.
- Using your hands, form the mixture into small balls, about 1 inch in diameter.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to allow them to firm up.
- Store in an airtight container in the refrigerator for up to one week.
