Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and pepper to taste
  • Paprika for garnish
  • Chives or parsley for garnish (optional)

Instructions

  1. Place eggs in a pot and cover with cold water. Bring to a boil over medium-high heat.
  2. Once boiling, cover the pot, remove from heat, and let sit for 12 minutes.
  3. Transfer eggs to an ice bath to cool for 5 minutes. Peel the eggs and slice them in half lengthwise.
  4. Remove yolks and place them in a bowl. Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper. Mash until smooth and creamy.
  5. Spoon or pipe the yolk mixture back into the egg whites.
  6. Sprinkle with paprika and garnish with chives or parsley if desired. Serve immediately or refrigerate until ready to serve.
