Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon lemon juice
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon cinnamon
  • 1/2 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the chopped rhubarb, granulated sugar, 1 tablespoon of flour, and lemon juice. Mix well and pour into a greased 9×13 inch baking dish.
  3. In another bowl, mix the rolled oats, 1 cup of flour, brown sugar, and cinnamon. Stir in the melted butter until the mixture is crumbly.
  4. Spread the oat mixture evenly over the rhubarb in the baking dish.
  5. Bake for 45 minutes or until the topping is golden brown and the rhubarb is bubbly.
  6. Allow to cool slightly before serving. Enjoy warm or at room temperature.
