- 2 pounds sweet potatoes, peeled and cubed

Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the cubed sweet potatoes, olive oil, brown sugar, cinnamon, salt, and pepper. Toss until the sweet potatoes are evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, turning halfway through, until the sweet potatoes are caramelized and tender.
- Remove from the oven and let cool slightly. Garnish with fresh parsley if desired.
- Serve warm and enjoy!
