- 2 lbs chicken breasts, boneless and skinless
- 1 cup BBQ sauce
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1 onion, diced
- 1 tsp garlic powder
- 1 tsp chili powder
- Salt and pepper to taste
- 6 whole wheat tortillas
- 1 cup shredded cheese (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Pour the BBQ sauce over the chicken.
- Add the corn, bell pepper, onion, garlic powder, chili powder, salt, and pepper on top.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shredded.
- Once cooked, shred the chicken using two forks and stir to combine with the sauce and vegetables.
- Serve the shredded chicken mixture in whole wheat tortillas, topped with cheese and fresh cilantro if desired.
Notes
- This recipe can also be made with beef or pork.
- Feel free to add other vegetables like zucchini or carrots.
- Leftovers can be stored in the refrigerator for up to 3 days.
