Ingredients

  • 2 lbs chicken breasts, boneless and skinless
  • 1 cup BBQ sauce
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 6 whole wheat tortillas
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Pour the BBQ sauce over the chicken.
  3. Add the corn, bell pepper, onion, garlic powder, chili powder, salt, and pepper on top.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shredded.
  5. Once cooked, shred the chicken using two forks and stir to combine with the sauce and vegetables.
  6. Serve the shredded chicken mixture in whole wheat tortillas, topped with cheese and fresh cilantro if desired.

Notes

  • This recipe can also be made with beef or pork.
  • Feel free to add other vegetables like zucchini or carrots.
  • Leftovers can be stored in the refrigerator for up to 3 days.
