- 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Add the asparagus pieces to the pot and cook for another 5 minutes, stirring occasionally.
- Pour in the broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes, or until the asparagus is tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender, but be cautious of the hot liquid.
- Stir in the heavy cream, and season with salt and pepper to taste. Heat the soup gently until warmed through, but do not let it boil.
- Serve hot, garnished with fresh parsley if desired.
