Description

Ingredients

  • 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
  2. Add the asparagus pieces to the pot and cook for another 5 minutes, stirring occasionally.
  3. Pour in the broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes, or until the asparagus is tender.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender, but be cautious of the hot liquid.
  5. Stir in the heavy cream, and season with salt and pepper to taste. Heat the soup gently until warmed through, but do not let it boil.
  6. Serve hot, garnished with fresh parsley if desired.
