- 8 oz (225 g) pasta of choice
- 2 ripe avocados, pitted and peeled
- 1 clove garlic, minced
- 2 tbsp fresh lemon juice
- 1/4 cup (60 ml) olive oil
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- Fresh basil, for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a blender or food processor, combine the avocados, garlic, lemon juice, and olive oil. Blend until smooth and creamy. Season with salt and pepper to taste.
- In a large bowl, combine the cooked pasta with the avocado sauce, mixing well to coat the pasta evenly.
- Gently fold in the halved cherry tomatoes.
- Serve immediately, garnished with fresh basil if desired.
Notes
- For added flavor, consider adding crushed red pepper flakes or grated Parmesan cheese.
