Ingredients

  • 2 ripe avocados, pitted and peeled
  • 1 clove garlic, minced
  • 2 tbsp fresh lemon juice
  • 1/4 cup (60 ml) olive oil
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • Fresh basil, for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a blender or food processor, combine the avocados, garlic, lemon juice, and olive oil. Blend until smooth and creamy. Season with salt and pepper to taste.
  3. In a large bowl, combine the cooked pasta with the avocado sauce, mixing well to coat the pasta evenly.
  4. Gently fold in the halved cherry tomatoes.
  5. Serve immediately, garnished with fresh basil if desired.
