Ingredients

- 4 cups fresh corn kernels (about 6 ears of corn)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced (any color)
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the corn, cherry tomatoes, red onion, bell pepper, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the corn mixture and toss gently to combine.
- Taste and adjust seasoning if necessary.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
- Feel free to add in other vegetables such as avocado or cucumber for extra freshness.
- This salad can be made a day in advance; just add the avocado right before serving to prevent browning.
