A refreshing and colorful cold pasta salad that’s perfect for summer picnics or barbecues.
Ingredients

- 8 ounces of pasta (penne or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/2 cup Italian dressing
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese.
- Pour the Italian dressing over the salad and toss to coat evenly.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with fresh parsley if desired.
