- 1 lb fresh vegetables (bell peppers, zucchini, mushrooms)
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 4 boneless chicken breasts
- 1 lemon, sliced
- Fresh herbs for garnish (optional)
Instructions
- Preheat your outdoor grill to medium-high heat.
- In a large bowl, combine the vegetables with olive oil, salt, black pepper, garlic powder, and Italian seasoning. Toss to coat evenly.
- Place the seasoned chicken breasts on a grill-safe plate and season with salt and pepper.
- Once the grill is hot, place the chicken breasts on the grill and cook for 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).
- During the last few minutes of grilling, add the seasoned vegetables to the grill. Grill until tender and slightly charred, about 5-7 minutes.
- Serve the chicken topped with grilled vegetables and lemon slices. Garnish with fresh herbs if desired.
