  • 2 cups cooked chicken breast, diced
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup blue cheese, crumbled
  • 4 hard-boiled eggs, quartered
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, arrange the mixed lettuce as a base.
  2. Layer the cooked bacon, chicken breast, avocado, cherry tomatoes, blue cheese, hard-boiled eggs, and red onion on top of the lettuce.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
