Ingredients

- 6 cups mixed lettuce (romaine, arugula, and spinach)
- 1 cup cooked and crumbled bacon
- 2 cups cooked chicken breast, diced
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup blue cheese, crumbled
- 4 hard-boiled eggs, quartered
- 1/4 cup red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large salad bowl, arrange the mixed lettuce as a base.
- Layer the cooked bacon, chicken breast, avocado, cherry tomatoes, blue cheese, hard-boiled eggs, and red onion on top of the lettuce.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad just before serving. Toss gently to combine.
