A refreshing and zesty dish featuring grilled chicken marinated in citrus juices and served with a vibrant fresh herb salad.


Ingredients

  • 4 pieces chicken breasts
  • 1/2 cup orange juice
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh mint
  • 1 medium cucumber
  • 1 cup cherry tomatoes

Instructions

  1. In a bowl, whisk together orange juice, lemon juice, olive oil, garlic, salt, and pepper.
  2. Place chicken breasts in a resealable plastic bag or shallow dish and pour marinade over the top. Seal or cover and refrigerate for at least 30 minutes, or up to 2 hours.
  3. Preheat grill to medium-high heat. Remove chicken from marinade and discard the marinade.
  4. Grill chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  5. While the chicken is grilling, prepare the salad by combining parsley, cilantro, mint, cucumber, and cherry tomatoes in a bowl.
  6. Drizzle with a little olive oil and toss to combine.
  7. Once chicken is cooked, remove from grill and let it rest for a few minutes before slicing.
  8. Serve the grilled chicken over the fresh herb salad.
