- 4 pieces chicken breasts
- 1/2 cup orange juice
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 2 cloves garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley
- 1/4 cup fresh cilantro
- 1/4 cup fresh mint
- 1 medium cucumber
- 1 cup cherry tomatoes
Instructions
- In a bowl, whisk together orange juice, lemon juice, olive oil, garlic, salt, and pepper.
- Place chicken breasts in a resealable plastic bag or shallow dish and pour marinade over the top. Seal or cover and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat grill to medium-high heat. Remove chicken from marinade and discard the marinade.
- Grill chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- While the chicken is grilling, prepare the salad by combining parsley, cilantro, mint, cucumber, and cherry tomatoes in a bowl.
- Drizzle with a little olive oil and toss to combine.
- Once chicken is cooked, remove from grill and let it rest for a few minutes before slicing.
- Serve the grilled chicken over the fresh herb salad.
