Delicious chicken breasts cooked in a creamy Parmesan sauce with fresh spinach and garlic.

- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- Fresh parsley, for garnish
Instructions
- Season chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side. Remove chicken and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Reduce the heat to medium and pour in the heavy cream. Stir to combine.
- Add Parmesan cheese, Italian seasoning, and crushed red pepper flakes (if using). Stir until the cheese is melted and the sauce is smooth.
- Return the chicken breasts to the skillet and coat them in the creamy sauce. Simmer for an additional 2-3 minutes.
- Garnish with fresh parsley before serving.
Notes
- You can substitute chicken breasts with chicken thighs for a juicier option.
- For a lighter version, use half-and-half instead of heavy cream.
- Serve over pasta, rice, or with crusty bread to soak up the sauce.
