Delicious chicken breasts cooked in a creamy Parmesan sauce with fresh spinach and garlic.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, for garnish

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Reduce the heat to medium and pour in the heavy cream. Stir to combine.
  6. Add Parmesan cheese, Italian seasoning, and crushed red pepper flakes (if using). Stir until the cheese is melted and the sauce is smooth.
  7. Return the chicken breasts to the skillet and coat them in the creamy sauce. Simmer for an additional 2-3 minutes.
  8. Garnish with fresh parsley before serving.

Notes

  • You can substitute chicken breasts with chicken thighs for a juicier option.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Serve over pasta, rice, or with crusty bread to soak up the sauce.
