  • 1/4 teaspoon almond extract (optional)
  • 1 tablespoon butter, cut into small pieces
  • 1 package refrigerated pie crusts (or homemade pie crust)
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract. Mix until the cherries are well coated.
  3. Roll out one pie crust and fit it into a 9-inch pie plate.
  4. Pour the cherry mixture into the crust and dot with butter pieces.
  5. Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal.
  6. Cut slits in the top crust to allow steam to escape.
  7. In a small bowl, whisk together the egg and milk. Brush the mixture over the crust.
  8. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the filling is bubbly.
  9. Let the pie cool before slicing and serving.
