- 2 cups fresh or frozen cherries, pitted
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 1 tablespoon butter, cut into small pieces
- 1 package refrigerated pie crusts (or homemade pie crust)
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract. Mix until the cherries are well coated.
- Roll out one pie crust and fit it into a 9-inch pie plate.
- Pour the cherry mixture into the crust and dot with butter pieces.
- Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal.
- Cut slits in the top crust to allow steam to escape.
- In a small bowl, whisk together the egg and milk. Brush the mixture over the crust.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the filling is bubbly.
- Let the pie cool before slicing and serving.
Notes
- For a deeper flavor, try using a mix of sweet and tart cherries.
- Serve with vanilla ice cream or whipped cream for a delicious treat.
