Description
A creamy and cheesy pasta bake that’s loaded with chicken, spinach, and flavor. This dish combines the best of cheesy spinach dip and pasta for a comforting meal.

- 8 ounces penne pasta
- 2 cups cooked chicken, shredded
- 1 cup frozen spinach, thawed and drained
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional for topping)
- 1 tablespoon olive oil (optional for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large mixing bowl, combine the shredded chicken, thawed spinach, cream cheese, sour cream, mozzarella cheese, and half of the Parmesan cheese. Mix until well combined.
- Add the cooked penne pasta to the mixture and stir until the pasta is evenly coated.
- Season with garlic powder, onion powder, salt, and pepper. Mix well.
- Transfer the pasta mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Sprinkle the remaining Parmesan cheese on top. If desired, mix the breadcrumbs with olive oil and sprinkle over the top for added crunch.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
- Feel free to add more vegetables like bell peppers or mushrooms for extra flavor and nutrition.
- You can use rotisserie chicken for a quicker preparation.
- This dish can be made ahead of time and stored in the refrigerator before baking.
