- 8 ounces rotini or penne pasta
- 2 cups cooked chicken, shredded
- 1 cup fresh spinach, chopped
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large bowl, combine the cooked pasta, shredded chicken, chopped spinach, cream cheese, sour cream, mozzarella cheese, cheddar cheese, Parmesan cheese, minced garlic, and Italian seasoning. Mix until well combined.
- Season with salt and pepper to taste.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- If using, sprinkle breadcrumbs over the top for added crunch.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- You can substitute fresh spinach with frozen spinach, just make sure to thaw and drain it well before adding.
- Feel free to add other vegetables like bell peppers or mushrooms for added flavor.
- This dish can be made ahead of time and stored in the refrigerator. Just bake it when you’re ready to serve.
