Description

Ingredients

  • 8 ounces rotini or penne pasta
  • 2 cups cooked chicken, shredded
  • 1 cup fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large bowl, combine the cooked pasta, shredded chicken, chopped spinach, cream cheese, sour cream, mozzarella cheese, cheddar cheese, Parmesan cheese, minced garlic, and Italian seasoning. Mix until well combined.
  4. Season with salt and pepper to taste.
  5. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  6. If using, sprinkle breadcrumbs over the top for added crunch.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

  • You can substitute fresh spinach with frozen spinach, just make sure to thaw and drain it well before adding.
  • Feel free to add other vegetables like bell peppers or mushrooms for added flavor.
  • This dish can be made ahead of time and stored in the refrigerator. Just bake it when you’re ready to serve.
