- 4 medium russet potatoes, peeled and cubed

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the cubed potatoes with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, flipping halfway through for even cooking.
- Remove the potatoes from the oven and sprinkle shredded cheddar cheese and grated Parmesan cheese on top.
- Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh parsley, and serve hot.
