  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and let cool.
  4. In a large mixing bowl, beat the softened cream cheese until smooth.
  5. Add 1 cup sugar and vanilla extract, mixing until combined.
  6. Add eggs one at a time, mixing on low speed until just combined. Do not overmix.
  7. Add sour cream and flour, mixing until smooth.
  8. Pour the cheesecake filling over the cooled crust and smooth the top.
  9. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  10. Turn off the oven and leave the cheesecake in the oven for 1 hour.
  11. Remove from the oven and let cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.
