Description

This refreshing ceviche recipe features fresh seafood marinated in citrus juices, combined with vibrant vegetables and spices for a perfect summer dish.


Ingredients

  • 1 lb fresh fish (such as tilapia or snapper) (cut into small cubes)
  • 1 cup lime juice (freshly squeezed)
  • 1/2 red onion (finely chopped)
  • 1 tomato (diced)
  • 1 cucumber (peeled and diced)
  • 1/4 cup cilantro (chopped)
  • 1 jalapeño (seeded and minced)
  • to taste salt
  • to taste black pepper

Instructions

  1. In a large bowl, combine the fish cubes and lime juice. Ensure the fish is completely submerged in the juice.
  2. Cover the bowl and refrigerate for about 30 minutes, or until the fish is opaque and ‘cooked’ by the lime juice.
  3. Once the fish is ready, drain some of the lime juice if desired, and add the red onion, tomato, cucumber, cilantro, and jalapeño to the bowl.
  4. Season with salt and black pepper to taste, and gently toss everything together.
  5. Serve immediately with tortilla chips or on its own. Enjoy your fresh ceviche!
