- 1 lb fresh fish (such as tilapia or snapper) (cut into small cubes)
- 1 cup lime juice (freshly squeezed)
- 1/2 red onion (finely chopped)
- 1 tomato (diced)
- 1 cucumber (peeled and diced)
- 1/4 cup cilantro (chopped)
- 1 jalapeño (seeded and minced)

Instructions
- In a large bowl, combine the fish cubes and lime juice. Ensure the fish is completely submerged in the juice.
- Cover the bowl and refrigerate for about 30 minutes, or until the fish is opaque and ‘cooked’ by the lime juice.
- Once the fish is ready, drain some of the lime juice if desired, and add the red onion, tomato, cucumber, cilantro, and jalapeño to the bowl.
- Season with salt and black pepper to taste, and gently toss everything together.
- Serve immediately with tortilla chips or on its own. Enjoy your fresh ceviche!
