Ingredients

  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 cup (90g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup (175g) chocolate chips (optional)
  • Marshmallows for topping (optional)

Instructions

  1. Prepare a camping area with a campfire and a cast iron skillet or a heavy-duty aluminum foil pan.
  2. In a large mixing bowl, combine melted butter and sugar, mixing until smooth.
  3. Add in eggs one at a time, stirring well after each addition, then mix in vanilla extract.
  4. In another bowl, whisk together flour, cocoa powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Fold in chocolate chips if using.
  6. Pour the brownie batter into the prepared skillet or pan and smooth out the top.
  7. Cover the pan with a piece of foil, leaving a little space for steam to escape.
  8. Place the skillet over the campfire grate or on hot coals, cooking for about 20-25 minutes or until a toothpick inserted comes out mostly clean.
  9. If desired, add marshmallows on top in the last 5 minutes of cooking, allowing them to melt and brown.
  10. Remove from heat, let cool slightly, then slice and serve warm.
