Ingredients
Scale
- 1 cup (225g) unsalted butter, melted
- 2 cups (400g) granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup (125g) all-purpose flour
- 1 cup (90g) unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 cup (175g) chocolate chips (optional)
- Marshmallows for topping (optional)
Instructions
- Prepare a camping area with a campfire and a cast iron skillet or a heavy-duty aluminum foil pan.
- In a large mixing bowl, combine melted butter and sugar, mixing until smooth.
- Add in eggs one at a time, stirring well after each addition, then mix in vanilla extract.
- In another bowl, whisk together flour, cocoa powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined. Fold in chocolate chips if using.
- Pour the brownie batter into the prepared skillet or pan and smooth out the top.
- Cover the pan with a piece of foil, leaving a little space for steam to escape.
- Place the skillet over the campfire grate or on hot coals, cooking for about 20-25 minutes or until a toothpick inserted comes out mostly clean.
- If desired, add marshmallows on top in the last 5 minutes of cooking, allowing them to melt and brown.
- Remove from heat, let cool slightly, then slice and serve warm.
