- 6 ripe tomatoes, diced
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- 1 baguette, sliced
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- In a medium bowl, combine the diced tomatoes, fresh basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Stir gently to combine and set aside to let the flavors meld for about 15 minutes.
- Preheat the oven to 400°F (200°C).
- Arrange the baguette slices on a baking sheet and toast in the oven for about 5-7 minutes, or until golden brown.
- Remove the toasted bread from the oven and let it cool slightly.
- Top each slice of toasted bread with the tomato mixture. If desired, sprinkle with grated Parmesan cheese.
- Serve immediately and enjoy your delicious bruschetta!
