Ingredients

  • 1 cup fresh blueberries
  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup freshly squeezed lemon juice
  • 4 cups cold water
  • Ice cubes
  • Lemon slices and extra blueberries for garnish

Instructions

  1. In a small saucepan, combine 1 cup of blueberries, 1 cup of sugar, and 1 cup of water. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves.
  2. Once boiling, reduce heat and simmer for about 10 minutes until the blueberries break down and the mixture thickens slightly. Remove from heat and let cool.
  3. Strain the blueberry mixture through a fine mesh sieve into a pitcher, discarding the solids.
  4. Add 1 cup of freshly squeezed lemon juice and 4 cups of cold water to the pitcher. Stir well to combine.
  5. Taste and adjust sweetness if necessary by adding more sugar or water.
  6. Serve over ice, garnished with lemon slices and extra blueberries.

Notes

  • For a fizzy version, replace some of the cold water with soda water.
  • You can make the blueberry syrup ahead of time and store it in the fridge for up to a week.
