- 4 chicken thighs, bone-in and skin-on
- 1 cup beer (lager or ale)
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 4 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- In a bowl, whisk together the beer, olive oil, soy sauce, honey, garlic, Dijon mustard, rosemary, thyme, salt, and pepper.
- Place the chicken thighs in a resealable plastic bag or a shallow dish.
- Pour the marinade over the chicken, ensuring all pieces are well coated.
- Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight.
- Preheat the grill or oven to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill or roast the chicken thighs for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
- Let the chicken rest for a few minutes before serving.
