  • 1 cup beer (lager or ale)
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together the beer, olive oil, soy sauce, honey, garlic, Dijon mustard, rosemary, thyme, salt, and pepper.
  2. Place the chicken thighs in a resealable plastic bag or a shallow dish.
  3. Pour the marinade over the chicken, ensuring all pieces are well coated.
  4. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight.
  5. Preheat the grill or oven to medium-high heat.
  6. Remove the chicken from the marinade and discard the marinade.
  7. Grill or roast the chicken thighs for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
