Ingredients

  • 4 pounds beef short ribs, bone-in
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons brown sugar
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh herbs (thyme, rosemary) for garnish

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef short ribs generously with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned. Remove and set aside.
  4. In the same pot, add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute.
  5. Stir in beef broth, red wine, brown sugar, tomato paste, and Worcestershire sauce. Bring to a simmer.
  6. Return the short ribs to the pot, cover with a lid, and transfer to the oven.
  7. Cook for 2.5 to 3 hours, or until the meat is fork-tender.
  8. Remove from the oven and let rest for a few minutes. Skim any excess fat from the surface.
  9. Serve garnished with fresh herbs.

Notes

  • You can substitute the red wine with additional beef broth if desired.
  • For added flavor, consider marinating the short ribs in the wine and seasonings overnight before cooking.
