- 4 pounds beef short ribs, bone-in
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons brown sugar
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Fresh herbs (thyme, rosemary) for garnish
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef short ribs generously with salt and pepper.
- In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned. Remove and set aside.
- In the same pot, add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute.
- Stir in beef broth, red wine, brown sugar, tomato paste, and Worcestershire sauce. Bring to a simmer.
- Return the short ribs to the pot, cover with a lid, and transfer to the oven.
- Cook for 2.5 to 3 hours, or until the meat is fork-tender.
- Remove from the oven and let rest for a few minutes. Skim any excess fat from the surface.
- Serve garnished with fresh herbs.
Notes
- You can substitute the red wine with additional beef broth if desired.
- For added flavor, consider marinating the short ribs in the wine and seasonings overnight before cooking.
