- 4 cups coleslaw mix
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups baked beans
- 1/2 cup BBQ sauce
- 1/4 cup diced onion
- 2 cups corn kernels (fresh or frozen)
- 1/2 cup diced bell pepper
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix well and refrigerate for at least 30 minutes.
- In a pot, combine baked beans, BBQ sauce, and diced onion. Heat over medium heat until warmed through, stirring occasionally.
- In a skillet, heat olive oil and butter over medium heat. Add corn and bell pepper, season with garlic powder, salt, and pepper. Sauté until the vegetables are tender, about 5-7 minutes.
- Serve the coleslaw, baked beans, and corn as sides to your BBQ main dishes.
Notes
- Feel free to add your favorite spices to the baked beans for extra flavor.
- You can substitute the corn with other veggies like zucchini or carrots if desired.
- This recipe can easily be doubled for larger crowds.
