A delicious and healthy asparagus frittata, perfect for breakfast or brunch.


Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup shredded cheese (cheddar or feta)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  3. In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  4. Add the asparagus and cherry tomatoes to the skillet and cook for another 3-4 minutes until the asparagus is tender.
  5. Pour the egg mixture over the vegetables in the skillet. Stir gently to combine.
  6. Cook on the stovetop for about 2-3 minutes until the edges start to set.
  7. Sprinkle the shredded cheese on top of the frittata.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
  9. Remove from the oven and let it cool for a few minutes before slicing. Serve warm.
