Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1 cup fresh asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup diced onion
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs and milk. Season with salt and pepper.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  4. Add asparagus to the skillet and cook for about 3-4 minutes until tender.
  5. Pour the egg mixture over the asparagus and onion. Stir gently to combine.
  6. Sprinkle cheese on top of the egg mixture.
  7. Cook on the stove for 2-3 minutes until the edges begin to set.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
