Ingredients

  • 4 cups fresh apricots, pitted and sliced
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced apricots, 1/2 cup of sugar, lemon juice, and vanilla extract. Toss to coat and set aside to marinate for about 10 minutes.
  3. In another bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt.
  4. Add the melted butter and milk to the flour mixture, stirring until just combined. Do not overmix.
  5. Pour the apricot mixture into a greased 9×13 inch baking dish. Spoon the biscuit batter evenly over the top of the apricots.
  6. Sprinkle ground cinnamon over the biscuit topping if desired.
  7. Bake in the preheated oven for 30 to 35 minutes, or until the topping is golden brown and a toothpick inserted comes out clean.
  8. Let cool for a few minutes before serving.

Notes

  • Serve warm with vanilla ice cream or whipped cream for an extra treat.
  • You can substitute fresh apricots with canned or frozen apricots, but be sure to drain them well.
