A delicious and easy apricot cobbler recipe that highlights the sweet and tangy flavor of fresh apricots with a buttery biscuit topping.

- 4 cups fresh apricots, pitted and sliced
- 1 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 1 teaspoon ground cinnamon (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the sliced apricots, 1/2 cup of sugar, lemon juice, and vanilla extract. Toss to coat and set aside to marinate for about 10 minutes.
- In another bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt.
- Add the melted butter and milk to the flour mixture, stirring until just combined. Do not overmix.
- Pour the apricot mixture into a greased 9×13 inch baking dish. Spoon the biscuit batter evenly over the top of the apricots.
- Sprinkle ground cinnamon over the biscuit topping if desired.
- Bake in the preheated oven for 30 to 35 minutes, or until the topping is golden brown and a toothpick inserted comes out clean.
- Let cool for a few minutes before serving.
Notes
- Serve warm with vanilla ice cream or whipped cream for an extra treat.
- You can substitute fresh apricots with canned or frozen apricots, but be sure to drain them well.
