Ingredients

  • 4 cups rhubarb, chopped
  • 4 cups apples, peeled and sliced (Granny Smith or Honeycrisp recommended)
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the chopped rhubarb, sliced apples, granulated sugar, brown sugar, lemon juice, and vanilla extract. Mix well and set aside.
  3. In a separate bowl, combine the rolled oats, flour, softened butter, cinnamon, nutmeg, and salt. Mix until crumbly.
  4. In a greased 9×13 inch baking dish, spread the fruit mixture evenly on the bottom.
  5. Sprinkle the oat mixture evenly over the fruit.
  6. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the fruit is bubbly.
  7. Let cool slightly before serving. Enjoy warm with ice cream or whipped cream!
