- 4 cups rhubarb, chopped
- 4 cups apples, peeled and sliced (Granny Smith or Honeycrisp recommended)
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the chopped rhubarb, sliced apples, granulated sugar, brown sugar, lemon juice, and vanilla extract. Mix well and set aside.
- In a separate bowl, combine the rolled oats, flour, softened butter, cinnamon, nutmeg, and salt. Mix until crumbly.
- In a greased 9×13 inch baking dish, spread the fruit mixture evenly on the bottom.
- Sprinkle the oat mixture evenly over the fruit.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the fruit is bubbly.
- Let cool slightly before serving. Enjoy warm with ice cream or whipped cream!
